Platters-Salads
Ordering several varieties of salads or platters, allow 4 oz. per person. If ordering only one kind, 6 oz. per person is sufficient.
Example:
20 people x 6 oz. = 120 oz.
Divide 120 oz. by 16 oz. =7 ½ lbs.
Allow 4 oz. of smoked fish per person
All salads, when available, in individual portions.
